Ingredients
4 pieces of lamb chops
2 tablespoons lemon juice (optional)
1 teaspoon salt
1 teaspoon sugar
1/2 onion,chopped
2 handfuls of spinach
1/1/2 handfuls of almonds
2 tablespoons olive oil
2 teaspoons paprika
2 teaspoons garam masala
1 teaspoon chilli powder
2 cloves garlic
1/2 fresh chilli,chopped
olive oil for frying
Directions
1) Wash and rinse lamb chops with lemon juice and water.
2) Flavour the lamb chops with salt,sugar,onions,paprika,garam masala,chilli powder and galric n a big bowl.
3) Using a blender blend the spinach and almonds with 2 tablespoons of olive oil
4) Once blended add 1/2 the almond spinach pesto to the lamb chops and stir. Making sure to refrigerate the other half.
5) Put in the fridge overnight or for about 3 - 4 hours but overnight is best as it lets the lamb chops take in all the flavours.
6) Take out of fridge and add fresh chilli slices and the leftover almond spinach pesto as well. Leave for sit for 5 to 10 mins and then stir.
7) Put some olive oil in a frying pan on a medium to low heat and leave for 4 mins.
8) Add in lamb chops and let fry on each side for about 7 mins.
9) Serve and Enjoy
This dish can be had with salad,roast potatoes or anything you fancy. :)
