Beef & Vegetable Stuffed Plantains
On heavy lifting days, I like to enjoy a heavy meal and not only did the farmer's market have ripe plantains, I was also craving steak. Red meat is not the best choice of protein if you are working to lose weight, but for someone like me trying to gain weight, it doesn't hurt to eat this once in a while. Try this and stuff your plantain with your favorite fruits and vegetables!
Ingredients:
Beef
Plantain
Carrots, Red & White Onions, Cucumber, Green Pepper, Sweet Corn
Lite Soy Sauce
1 teaspoon of whipped butter (low saturated fat)
Red Pepper, Onion powder, Black Pepper and Salt
*Pure Honey is optional
Directions:
- Chop up the beef and vegetables. Spice your meat with red pepper, salt, black pepper and onion powder.
- Pre-heat the oven to 350 deg F
- Add the meat to a hot pan with the whipped butter. Add onions and cook for about 4 minutes.
- Add about 2 table spoons of lite soy sauce. Stir for about 2 minutes.
- Take out the cooked meat and in the same pan, cook the carrots, peppers, sweet corn and cucumber for about 3 minutes.
- Slice the plantain making room for the stuffing to be added.
- You may glaze the outside surface of the plantain with pure honey.
- Stuff the plantain nicely with the meat and vegetables and place in oven for 8 minutes.
Arrange it nicely on a dinner plate and serve with a glass of red wine (or lime water preferably).
