FitNigeria Healthy Snack: Chicken Stuffed Peppers (with Mango-Banana Smoothie)
They say necessity is the father of creativity (or something like that). I needed a snack and decided to make something with ingredients I love to eat on a regular basis. This is so easy, it would be a crime not to try it.
Ingredients:
1 chicken breast
2 garlic cloves
White onions
Mushrooms
Favorite Spices (Crushed red peppers, Adobo seasoning, Onion powder, Black pepper)
Almonds
Soy sauce
Olive oil
Sweet peppers
Black beans, sweet corn, carrots, green beans (as sides)
Directions:
- Carefully remove fat from the chicken breast. Cut the chicken into cubes and chop up the garlic cloves, mushrooms, almonds and onions.
- Spice up your chicken, mix it with the chopped up garlic and leave covered in the fridge for 1 hour to absorb all the spices.
- Heat your pan (medium heat), drizzle on 1 teaspoon of oilve oil onto the pan and throw in the chicken. Stir fry for 5 minutes.
- Add a table spoon of soy sauce, the chopped up onions, almonds and mushrooms. Stir is all up...mmm.
- Cut the peppers to 2/3 height, take out seeds and stuff them with the cooked chicken.
- Bake at 305 deg F for 7 minutes if you like peppers cooked. Bake for shorter time for crispier peppers.
- Serve with black beans, sweet corn, carrots and green beans.
- Smoothie: Blend mango, banana, 2 cubes of ice, 1 tea spoon of honey and enjoy!

Nice recipe, and I plan to make this! Do you have to boil the chicken breast to soften it first though? Cos chicken found over here is tough!
