Jollof Rice and Honey Mustard Steak


A great simple way to make authentic Jollof rice and a flavoursome steak.

prep time: 15-20mins cook time: 1 hour serves: 2

Ingredients 

Jollof Rice
2 tablespoons olive oil
2 tomatoes,chopped
2 onions,chopped
1/2 tin sweetcorn(optional)
1 thyme sprig
2 bay leaves
2 teaspoons ground cumin
2 teaspoons ground tumeric
2 teaspoons cayenne pepper
2 teaspoons paprika
2 cups basmati rice
1 cup boiling water

Roast steak
2 tablespoons olive oil
juice of 1 lemon
2 pieces of  frying steak
2 teaspoons honey
1 teaspoon mustard
1 thyme sprig
1 teaspoon salt
2 teaspoons paprika
1 teaspoon chilli flakes
2 garlic cloves, chopped

Method

1) Preheat the oven to 180 for the steak.

2) Cook the onions in oil for 5 - 10 mins on a medium heat in a large cooking pot.

3) Blend the tomatoes for jollof rice in a blender and add to the onions. Then add the thyme,bay leaf and remaing spices.

4) Next flavour your steak. Wash with lemon juice and water. Flavour it with honey,mustard,thyme and the other spices. Then leave in the fridge for 30 mins.

5) Whilst your steak is in the fridge, add the rice to the tomato and onion mixture with a cup of boiling water  on a medium heat for 10 -15 mins,

6) The water in the Jollof rice should start drying up and the rice should start softening, but if the rice is still hard add some more water.

7) Take the steak out of the fridge and fry in another pan with olive oil for about 5 -10 mins until both sides are brown and then put on a baking tray and place in the oven for 15 - 20 mins.

8) Then, check the rice has cooked and once it is soft, it is ready. I added some sweetcorn to my cooked rice.

9) The Jollof rice and steak are now ready. Serve together on a plate and enjoy.
