Shepherd's Pie

It feels like I've been gone forever (lol yh I know i have). Its been a struggle balancing my new work life with everything else but I'll get it sorted soon.

It was thanksgiving here in Canada over the weekend (Happy Thanksgiving guys), luckily I had monday off :) so I put in some work in the kitchen. I went with a shepherd's pie recipe. It was really easy and fast to get done. It also is a healthy meal that can be made with ingredients readily available in Nigeria and around the world. I know I got a few fish recipe requests, I'll get on that ASAP, pinky promise.

Ingredients

Potatoes
Lean Ground Beef (lean turkey is even healthier, so you can substitute)
Mixed Veggies (carrots, corn and peas)
Onion
Garlic
Ginger
Milk (Skim)
Butter(very little)

Process



1. Peel potatoes, wash and place in a clean pot with water and salt to boil till extra soft.


2. In a bowl spice the lean ground beef with chilli flakes, knorr, salt, thyme, rosemary and parsley (tbh you can use what ever spices you want here, I pretty much just free styled with my spices), knead the spices into the meat. Knorr contains a good amount of salt so easy with it :).



3. In a clean NON GREASED heated wok, throw in the ground beef in batches till browned. I did mine in about 4 batches roughly. (The meat has enough fat).




4. Cut up the onion, garlic and ginger and throw into the wok with very little oil. (Remember, I just used the oil that the ground beef produced).



5. Throw in the mixed veggies to cook, then add in the ground beef after, add any spices if required here. I just sprinkled one more knorr cube in here



6. In a small pan heat up some skim milk and throw some butter inside it, stir till the butter is melted properly.




7. Potatoes should be boiled by now, drain the water in the pot and mash up the potatoes, adding in the milk little by little till you have a smooth mashed potato mixture.





8. In a pan pour in the ground beef mixture and smooth the potato mixture over it.



 9. Take a fork and rough up the top on the potatoes, i made diagonal lines on mine. You can get creative here.


10. Place in the oven at 400 degrees to bake for about 15 minutes, keep checking it. Once its brown you can take it out.



11. Wait till it cools down, then cut a piece of your Shepherd's pie and serve. Dinner is served :).
