2 Tbsp. olive oil
1 egg
1 ripe plantain cut into ½” cubes
1 medium sized sweet potato cut into ½” cubes
1 onion, diced
1 green bell pepper, diced
2 tsp. fresh parsley, chopped
5 small mushrooms sliced & diced
Salt, crushed red and black pepper, to taste

Directions:
- Preheat 1 Tbsp of olive oil in a large nonstick skillet over medium heat. Add sweet potatoes, and place a lid on the pan.
- Allow the potatoes to cook covered for about 8 minutes.
- Remove the lid and increase the heat to medium high. Add plantains, onions, mushrooms and bell peppers with the second Tbsp of olive oil drizzled over and cook for 12 - 15 minutes, stirring occasionally, until the potatoes and vegetables turn golden brown.
- Season with salt, crushed red and black peppers.
- Top with a fried egg, prepared to your liking.
