Chicken suya on lettuce/rice stir-fry from 9jafoodie
Ingredients:
Boneless skinless chicken thighs -4 Pieces
Salt- to taste
Freshly cracked black or Cameroon pepper – To taste
Maggi – 1 cube
Suya spice mix – 1 heaped teaspoon
Oil – 1 Tablespoons
Peppers and onions – Thinly Sliced
Other: Wrap or Lettuce for serving
Mustard/Avocado
Directions:
- Cut the chicken into thin strips
- Combine the cut chicken, pepper, salt and maggi. Set aside.
(You may choose to marinate the chicken for at least 2 hours or overnight)
- Place a large skillet on high heat, heat up the oil, and add the chicken. Stir fry on all sides until the chicken is thoroughly cooked (about 5-6 minutes)
Add the suya spice. stir fry for 1 minute. Add chopped peppers and onions. Remove from heat and set aside.
Serve the stir-fry with some mustard or mashed avocado using flour wrap or lettuce. You can also serve with rice .
