Today we are working on crepes ( A crêpe or crepe (pronounced: krayp) is a type of very thin pancake, usually made from wheat flour. It originates from France and is considered a French national dish).
So i recently found out that there are healthier ways to make crepes that still taste as nice as the unhealthy versions so i decided to take a go at it. This recipe replaces flour with oatmeal which i found really interesting. It was pretty easy to make and fun at the same time. Here we go:
Ingredients
1/2 cup Oatmeal
1 Banana
5 Strawberries
1 cup Milk(soy, almond, skim etc)
1 Egg
1 tsp vanilla extract
Topping
Honey(drizzled)
1 tsp icing sugar
2 tbsp plain Greek yogurt
Process
1. Pour in the oatmeal in a blender and blend it till it forms a smooth powder. Then add in half of the banana, one egg, milk and a teaspoon of vanilla extract and blend into a batter.
2. The batter should be very light and "liquidy" (is that even a word lol) in consistency so that when you pour it spreads easily. If it isn't add a little water or milk just to liquefy it a little.
3. Spray some cooking oil in a non stick pan on low heat and then pour and spread some batter around the pan.
4. Flip until both sides are properly browned and then put in a clean dry plate.
5. Add the strawberries and the bananas on the crepe.
6. Add two scoop of plain Greek yogurt on the side ( I used Oikos, you can use chobani etc), dust icing sugar over the food and drizzle a little honey! Voila!!!
