Stir- fry Wednesday

  So I decided to make another post that has readily available ingredients everywhere ( I apologize if previous posts failed to be that practical). I decided to go with a beef stir fry today which can be served with a small side of basmati/brown rice, potatoes (boiled or mashed) or noodles to name a few. I chose this cause the prep time is pretty decent and it has a nice healthy balance of nutrients, vegetables, protein from the meat and itty bitty carbs from our side.

I tried to keep this as simple as possible lol I usually get carried away doing these posts but I really tried this time I promise.  

Prep time : 45 minutes

Ingredients 

Beef
Sweet Peppers (you could try any other veggies, these just happen to be my faves)
Spices (salt, maggi, parsley, thyme, curry, pepper)
Olive oil
Onions
Garlic
Ginger
Spring onions

Process

1. Clean your beef and remove all the fat if any ( you could substitute for shrimps or chicken or anything else that's a great source of protein)



2. Cut the beef into thin slices (Tip: thinner slices cook all the way in faster)


3. Wash your beef and spice, avoid using too much salt or sodium related products. I used soy sauce here but one extremely low in sodium but you could skip using it. Let the meat marinate in the fridge while you work on everything else.



4. Rinse and cut up all your needed veggies in little pieces




5. In a wok (or frying pan) pour very little olive oil and heat up. Toss in the mix of onions, garlic, ginger and spring onions. This gives off the most amazing smell sigh lol


6. Add in the sweet peppers and stir fry together for 5- 7 minutes and then place in a bowl


7. In the same wok toss in our marinated meat and continually stir until brown. Add a little water and any extra required spice to taste. ( I didn't need to mainly cause it tasted nice already with the spices from the meat marinade)


8. Once the meat is cooked all the way in and tasty enough stir in the stir fry veggies and leave to simmer on low heat for a few minutes.

and we have our finished product :)
