Lamb One Pot

This delicious slow cooked one pot lamb dish is nourishing and full of lovely flavours.

prep time: 15 mins + 3 hours fridge time cook time: 2-3 hours serves: 6

Ingredients

6 lamb chops
4 tbsp olive oil for frying
2 tsbp suya spice
1 scent leaf, torn
1 tbsp chilli powder
1 tbsp thyme
1 maggi cube
2 tbsp honey
2  tbsp vinegar
1 tbsp black pepper
1 tbsp soy sauce
2 tbsp onion powder
1 tbsp ginger/garlic paste
2 tbsp BBQ sauce
1 tbsp worcesterhire sauce
4 tbsp corn flour
a few pinches of salt
2 tsp cinammon
2 carrots, chopped
4 medium tomatoes, chopped
1 small chilli pepper,chopped
2 green peppers, chopped
2 handfuls peas
2 handfuls sweetcorn
1 handful cabbage
1 cup water

Method

1) Rinse lamb chops with lemon and water in a big bowl.

2) Add in all the spices and mix. Leave for 3- 4 hours in the fridge.

3) In a frying pan add in some olive oil and leave on a medium heat. Once hot add the lamb chops making sure to remove the torn scent leaf and fry them on each side for about 3 mins or until slightly browned. Put on your oven to 350c.

4) Cut up carrots,tomatoes chilli pepper and green pepper. Take out the lamb chops and add the chopped vegetables to the pan with a little bit more olive oil. Fry for about 2 mins and then add in the liquid from the lamb and leave for 2-3 mins till slightly thickened.

5) Get an oven proof dish and add in the lamb chops,chopped vegetables with the juices and a handful of chopped cabbage. Also add the peas and sweetcorn to the dish.

6) Pour water into the dish till it covers everything and put in the oven.

7) Keep checking until sauce thickens,lamb chops are tender and the vegetables are soft. This takes about 2 -3 hours.

8) Serve with bread or rice or whatever you fancy.
