FitNigeria Healthy Snack: Chicken Stuffed Peppers (with Mango-Banana Smoothie)
They say necessity is the father of creativity (or something like that). I needed a snack and decided to make something with ingredients I love to eat on a regular basis. This is so easy, it would be a crime not to try it.

1 chicken breast
2 garlic cloves
White onions
Favorite Spices (Crushed red peppers, Adobo seasoning, Onion powder, Black pepper)
Soy sauce
Olive oil
Sweet peppers
Black beans, sweet corn, carrots, green beans (as sides)

  •  Carefully remove fat from the chicken breast. Cut the chicken into cubes and chop up the garlic cloves, mushrooms, almonds and onions.
  • Spice up your chicken, mix it with the chopped up garlic and leave covered in the fridge for 1 hour to absorb all the spices.
  •  Heat your pan (medium heat), drizzle on 1 teaspoon of oilve oil onto the pan and throw in the chicken. Stir fry for 5 minutes.
  • Add a table spoon of soy sauce, the chopped up onions, almonds and mushrooms. Stir is all up...mmm.
  • Cut the peppers to 2/3 height, take out seeds and stuff them with the cooked chicken.
  •  Bake at 305 deg F for 7 minutes if you like peppers cooked. Bake for shorter time for crispier peppers.
  • Serve with black beans, sweet corn, carrots and green beans.
  •  Smoothie: Blend mango, banana, 2 cubes of ice, 1 tea spoon of honey and enjoy!

Nice recipe, and I plan to make this! Do you have to boil the chicken breast to soften it first though? Cos chicken found over here is tough!
