Spinach and Tomato Penne made with shrimp

Recently started working and I really have been pre occupied :( thats why i havent posted in a while, I apologize but i do promise to post twice a week hence forth :).

I wasnt sure what to make today but my colleague Koro (who does the work out posts) suggested the spinach and tomato penne with shrimp. It was a really fast recipe and it was super easy and yummy. I decided to pair the pasta up with chicken wings just so you get in that needed protein. 

Ingredients 

Whole wheat penne
Chicken wings
BBQ sauce
3 tomatoes
handful baby spinach
1 onion
2 small garlic cloves
ginger
Shrimps
Olive oil
Spices (Salt, pepper, knorr chicken, curry, thyme, parsley, rosemary)

Process

1. I pretty much made sure i had everything i needed for this recipe and arranged them for easy access. I hate messy kitchens lol so it all has to be organized





2. I cleaned the chicken wings, put them in a bowl and spiced them with salt, rosemary, soy sauce, thyme, curry, all purpose seasoning and red pepper.






3. I then mixed the spices in and added in the BBQ sauce ( I used the Diana brand that i love so much lol) and then placed in the fridge for a little while.


4. I deshelled the shrimps and spiced with salt, black pepper, knorr, all purpose seasoning and curry and placed in the fridge to marinate.




5. Then i moved on to the prep for the pasta. I chopped up the tomatoes, onions, garlic and the ginger.






6. I took the chicken out of the fridge and into the oven on a greased foil on low heat to broil.


7. I put the penne in a pot and rinsed with warm water. Then added water, salt and a drop of oil and put to boil. 




8. In a wok i heated up very little butter (you should use olive oil instead) and tossed in the garlic, onion and ginger mix. Once i could smell the flavour i threw in my shrimps to saute. (yes i realize i have wrecked this wok :( )







9. Once the shrimps were cooked i threw in the tomatoes and after 7 mins or there about i added the spinach. (Check on the wings and flip over if necessary).






10. Then i added the penne and let it cook on low heat. The wings should be ready too. Viola!!!




11. And then we plate the food all fancy for instagram lol

Lovely meal! I actually think I'll make something similar for my family tonight. It's great finding nutritious no-fuss meals when you're a busy, working household. Thank you for sharing.
