Veggie Rice Bowl

A quick and delicious rice dish packed with lots of vegetables making it very refreshing. 

prep time: 5 mins cook time:15 mins Serves:2 

Ingredients

1 cup brown basmati rice 
2 handfuls of green beans, rinsed and trimmed
2 small tomatoes, diced
1/2 cucumber, diced
1/2 green pepper, diced
1 carrot,grated 
1/4 cabbage,shredded
a few radishes,diced
1 spring onion,sliced 
a sprinkle of chilli powder (optional)

honey mustard dressing
3tbsp vinegar
2tsp honey
2tsp mustard

Method

1) Rinse all vegetables before cutting them. Boil 1 cup of brown basmati rice on a medium heat. Add in the trimmed green beans halfway through cooking. This should be about 7 mins in.

2) In a big bowl add in cabbage,carrot and green pepper. rice and green beans should be ready now. Let cool for about 5 mins and add into bowl. Add the renaming vegetables apart from the spring onion.

3) Make sure all your vegetables are in the big bowl and pour over dressing and stir.

4) Dish into bowls and garnish with spring onion.
