Aubergine two ways -Baba Ganoush and aubergine seafood pasta sauce

I had some aubergines around in my fridge and decided to experiment with making two healthy dishes with them. 


Baba Ganoush

prep time: 10 mins cook time: 10 mins serves: 4

A quick and easy dip recipe. It is also vegetarian and gluten-free not to mention delicious.

Ingredients

- 2 aubergines, chopped
-1/2 cup yoghurt
-2 garlic cloves
-3 tbsp lemon juice
-1 tbsp olive oil
-a few drops of water
-a pinch of salt
- a pinch of black pepper


Method

1) Rinse and chop aubergines. Put them in a pan with a little water and let them cook for about 5 mins.

2) In a blender add in aubergines, yoghurt, garlic,lemon juice,olive oil ,salt/pepper and blend till smooth.

3) Serve with flat breads and enjoy.

Flat breads 

-3 cups flour
-1/2 cup water
-3 tbsp olive oil

Method

1) Mix flour,water and olive oil in a bowl and use hands to bring everything together.

2) Knead dough for about 5 mins and divide into four balls. roll out balls and in a frying pan fry on each side for about 2 mins until slightly browned.

Aubergine seafood pasta sauce

prep time: 10 mins cook time: 15 mins serves: 2

Ingredients

- 1 tsp olive oil
-2 aubergines, chopped
-1 onion, chopped
-1/4 red chilli,chopped
-1/2 jar dolmio pasta sauce
-1 white fish fillet(boneless and skinless), chopped
-3 jumbo prawns
-1 tsp salt
-1 tsp black pepper
-2 cups spelt tagliatelle spinach
-1 cup water

Method

1) In a pan add in aubergines,onions and chilli and let fry for about 5-7 mins. Then add in pasta sauce, fish and prawns with the salt and pepper.

2) While the sauce is cooking boil pasta and this should take about 15 mins.

3) Toss pasta into sauce and serve. enjoy
