My recipe is based off the Nigerian Meat-pie but it is a quicker, and healthier method in my opinion. Enjoy!
Ingredients:
1
1/2 cups of your favorite meat (lean) e.g chicken, shrimp, tofu, beef,
pork, turkey- if you find these sold in packs, it makes preparation easy.
Fresh Uncooked Tortillas (wheat option here)- use unleavened bread as an alternative.
1/4 to 1/3 Cup of extra virgin olive/sunflower Oil (they provide the "good" cholesterol)
1/2 Cup Cup of Onion
1/2 Cup of Carrots
1/2 Cup of Sweet Peas- or just purchase a bag of frozen vegetables of your choice!
1 Cup Chopped Potato/frozen potato chipsFresh Uncooked Tortillas (wheat option here)- use unleavened bread as an alternative.

1 Tablespoon of Chopped Garlic (preference)
1 Tablespoon of Chopped Ginger (preference)
1 Tablespoon of Curry Powder
1 Teaspoon Thyme
1 Maggie Cube
1/2 teaspoon Sea Salt
1 egg
Aluminum Foil or Baking Pan

Prep and cook time:
30-35 minutes
Method:
Heat
some the oil in a saucepan on medium heat and add some of the onions
and garlic. Cook until they begin to soften. Add in your thyme, curry
and your preferred meat. Cover and cook for 1 0minutes or until almost done.
Add
in the potatoes , salt, maggi, remainder of the onions and garlic and
cover for another 3 minutes or until soft. At this point, preheat your
oven to 375 degrees.
Add in your (defrosted) frozen vegetables and cook for only 2
minutess while stirring so as not to loose the nutrients.
Lay
your tortillas on a flat surface. Ordinarily, the pastry would have to
be made from scratch which is time consuming and not everyone has that
skill. This substitutes nicely. Place the cooked filling in the centre
of the tortilla and fold one half so that the edges meet forming half a
circle.
Starting form one end of the half-circle begin folding/rolling inwards so as to
seal the edge and prevent leakage. You have formed a perfect pie.
Last
step is to baste the pie with the beaten egg so that it would forma
lovely golden brown crust at the top. Bake for about 10mins. This is
because the filling is cooked, but the tortilla is not.
And you are done. Now sink your teeth into the deliciousness that you have created.
Advantages:
Because I am diabetic i like to use wheat tortillas because the fiber contained
in them causes it to be digested slower and prevent blood sugar spikes
which is not good for anyone to be honest. It has a very good vegetable
content for minerals. The tortilla serves as the starch, the meat as
protein. A glass of juice would be a nice compliment to form a balanced
diet. It could serve as a snack or a main meal to be honest. In this
part of the world the meat is usually already prepared for you and
packaged so it reduces cutting time. Using frozen vegetables also
reduces prep time as they are already cut and prepared for
you.
