Nigerian fried rice

fried rice


 Nigerian fried rice is one of the most popular rice recipes in Nigeria. It is a party favourite at lots of gatherings. The best part about this dish is that you can customise it to your taste. You can add shrimps or if you are vegetarian leave that out and put in more vegetables. It is filling so works well on its own or as a main dish with fish stew.


Prep time: 10 minutes Cook time: 30 minutes Total time: 40 minutes
Serves: 2
Ingredients
2 tablespoons vegetable oil
2 onions, chopped
2 red peppers (tatashe), chopped
2 teaspoons dried thyme
2 teaspoon ginger powder
2 tablespoon curry powder
400g long grain white rice, washed
2 cups water
2 carrots, chopped
3 tablespoons tinned peas
salt and pepper
Method
  1. In a medium sized saucepan add in vegetable oil and leave on a medium heat for about 2 minutes. Once the oil is hot add in the chopped onions and peppers. Let the vegetables fry for about 6 minutes until slightly translucent.
  2. Then add in the thyme, ginger, curry and stir until well combined with the onions and peppers.
  3. Add in the 1 cup of white rice with 1 cup water and stir. Leave for about 10 minutes and keep checking frequently.
  4. You may need to keep adding water until the rice is soft. Add in the carrots at this stage,stir and leave for about 15 minutes until rice and carrots are both soft and the water is absorbed.
  5. Add in the peas, stir and salt and pepper to taste.
  6. Serve in a bowl and enjoy
